did you see it?

For a couple hours this morning it was cold and snowy and dare I say it, winter.
By lunch time is was almost gone - the roads dry, the sun out and snow a memory.
Did you see it?

Asian slaw

One of the things on my 2012 "to do" list is to make a recipe from one of the church cook books every month.  For January (yes, I know I'm late posting) I made some Asian slaw.  This is something quick, easy, makes a good amount and goes with lots of other items usually found at a pot luck.  It's also nice for a picnic or a change of pace for your meal's veggie side.

1 (12 oz) bag shredded broccoli slaw
1 package chicken flavor Ramen noodles
1/4 c toasted slivered almonds
1/2 c  veg oil
1/4 c sugar
1/4 red vinegar
sesame or sunflowers seeds
(sweet onion or green onion if you like - diced)

Mix the slaw, onion, crushed noodles and almonds (I didn't have slivered, so I improvised) in a bowl, set aside.  In a smaller bowl mix the vinegar, sugar, oil and flavor packet from the noodle mix.  Stir into the veggie bowl coating well.  Add the seed as the end, mixing briefly.

This should be served pretty promptly.  If you are traveling a bit to your destination, keep the dressing separate until you get there, then mix everything together.

February sky

"When the sun goes down, we'll be groovin'
When the sun goes down, we'll be feeling alright.

This old guitar and my dark sunglasses

This sweet concoction is smooth as molasses
Nothing to do but breathe all day
Until the big moon rises and it's time to play"
-Kenny Chesney

Happy Weekend Everyone, I hope it's a good one for you.
